Hello! I'm Elena, your nutrition expert from Castelló. Today we're going to talk about one of my favorite techniques and, without a doubt, the one that's most gentle on the product: steaming.
This morning, while preparing some artichokes from the area in my kitchen in Novelda, I was thinking about how little we sometimes value this technique. Unlike traditional boiling, here the food never touches the water; it cooks solely thanks to the heat of rising steam. Technically, it's the most effective way to keep the soul of the food intact.
The Science Behind Steam
Why is it so nutritionally superior? The answer lies in physics:
-
No Osmosis: When you submerge a vegetable in water (boiling), the minerals "escape" from the food into the water to balance concentrations. With steam, this doesn't happen. The mineral stays where it should: inside the food.
-
Protected Aromas: The flavor and volatile compounds (the ones responsible for taste and smell) don't get diluted, so the result is much more intense.
-
The Salt Trick: Did you know that if you add salt to the water at the bottom, it reaches the boiling point sooner? Salt displaces water molecules from the surface and helps the bubbling happen faster and more efficiently.
What do we get on the plate?
Steaming isn't just for "being on a diet"; it's for eating better:
-
Vibrant Colors: Vegetables keep their chlorophyll and carotenoids, looking much more appetizing.
-
Al Dente Texture: It's harder for food to fall apart or turn mushy.
-
Light Digestion: Since no added fats are needed during cooking, your stomach will thank you.
Elena's "Life Tip"
Not just for vegetables: Try fish (salmon turns out incredibly juicy) or even white meats like marinated chicken. If you want an extra hint of aroma, you can flavor the water at the bottom with herbs, spices, or a splash of wine; the steam will carry those subtle notes right to your food.
Do you have the steamer forgotten at the back of the cupboard, or are you one of those who already enjoy the authentic taste of steam? Tell me your favorite recipes!
