Step-by-Step Professional Preparation
1. Preparing the base dough
In a large bowl, mix the flours (gluten-free mix, starch, and corn flour) together with the Baking powder and the Stevia + Erythritol 1:1 from Castelló. Using the Baking powder , we ensure an airy, fluffy dough right away. Add the water and mix well until you have a smooth, lump-free batter. Since no baker's yeast is used, it does not require a long rise time, although letting the batter rest for 10 minutes will help hydrate the flours properly.
2. Adding the eggs
Add the first egg to the mixture and stir vigorously until fully incorporated. Repeat the process with the second egg. The final texture should be creamy but thick enough to hold its shape when scooped with a spoon.
3. Technical frying
Heat plenty of extra virgin olive oil in a deep saucepan. When the oil reaches the right temperature (about 170-180ºC), use two teaspoons to form small balls of batter and drop them in carefully. Thanks to the action of the Baking powder , the fritters will puff up quickly when they come into contact with the heat, staying very light inside.
4. Finishing and healthy coating
Remove the fritters when they are golden and place them on paper towels to remove excess oil. Immediately afterward, while they are still warm, coat them on a plate with Stevia + Erythritol 1:1 from Castelló. This product will stick perfectly, giving them that traditional sweet touch while keeping the recipe free from sugar and empty calories.
Go ahead and make these freshly made fritters to share a special snack with friends or family. Thanks to CASTELLO products, you can enjoy classic desserts while caring for your well-being and keeping your glycemic index stable.
