Cod and Carrot Burger

This burger is the light, healthy alternative to red meat versions. Cod provides high biological value protein and a flaky texture, while grated carrot adds sweetness, color, and moisture that keeps the fish from drying out while cooking. To enhance the marine flavor without exceeding sodium levels, we will use Bonsalt.

Ingredients

  • 500g cod loin (fresh or desalted, well drained)

  • 2 medium carrots, finely grated

  • 1 large egg

  • 3-4 tablespoons whole wheat breadcrumbs or oat flour (to bind)

  • A little chopped fresh parsley

  • 1 pinch garlic powder

  • Seasoning: Bonsalt and white pepper.

Professional Step-by-Step Preparation

  1. Preparing the fish: Make sure the cod has no bones or skin. Finely chop it with a knife (it is better than using a processor to keep a more interesting, less mushy texture).

  2. Vegetable integration: In a large bowl, mix the chopped cod with the grated carrot (be sure to drain off any excess water from the carrot if it is very wet).

  3. Binding: Add the egg, parsley, garlic powder, and whole wheat breadcrumbs. Mix well until the mixture is moldable. If it is too soft, add another tablespoon of breadcrumbs.

  4. Technical seasoning: Add Bonsalt and white pepper.

    Chef's note: If you use desalted cod, add Bonsalt with caution after tasting the mixture, as the fish retains its natural salty flavor. The potassium in Bonsalt is ideal here to round out the flavor without adding the usual sodium load of industrial fish preparations.

  5. Shaping: Divide the mixture into 4 portions and shape them into burgers with slightly moistened hands or with a plating ring.

  6. Cooking: Heat a griddle or nonstick skillet with a drizzle of olive oil. Cook the burgers over medium-high heat for about 4-5 minutes on each side, until golden on the outside and cooked through.
