Shrimp and pineapple cocktail

Cóctel de gambas y piña

This is a classic that never goes out of style, especially for celebrations and special dinners. The combination of the sweetness of pineapple with the taste of the sea is always a winning choice. To season the ingredients and balance the dressing, we will use Bonsalt 0%.

Technical Sheet

  • Estimated Time: 20 minutes

  • Difficulty:

  • Servings: 4 people

Ingredients

  • 400g cooked and peeled shrimp

  • 1 small fresh pineapple (or half a large one)

  • 2 extra pineapple slices for garnish

  • 100g iceberg lettuce or mixed salad greens

  • 4 tablespoons light mayonnaise

  • 1 tablespoon ketchup (preferably sugar-free)

  • A few drops of orange juice

  • Bonsalt 0%

  • A pinch of white pepper

Professional Step-by-Step Preparation

  1. Fruit preparation: Cut the fresh pineapple in half lengthwise and carefully remove the flesh, taking care not to break the shell if you are going to use it as a container. Cut the flesh into small cubes, discarding the central core if it is very hard.

  2. Vegetable base: Wash and finely shred the lettuce into thin strips. Drain it well so it does not add water to the cocktail.

  3. Making the pink sauce: In a small bowl, mix the mayonnaise with the ketchup and the drops of orange juice until you get an even color. Add a pinch of Bonsalt 0% and white pepper to enhance the whole dish.

  4. Mixing: In a large bowl, combine the pineapple cubes with the cooked shrimp. Add the pink sauce and stir gently so everything is well coated.

  5. Plating: Divide the lettuce among the serving glasses (or the empty pineapple halves). Place the shrimp and pineapple mixture on top.

  6. Final touch: Garnish with a small pineapple slice on the rim or a reserved whole shrimp. Serve very cold.
