Zucchini, Carrot, and Ham Couscous

Cuscús de calabacín, zanahoria y jamón

This recipe is a perfect solution for a quick, balanced, and tasty meal. The combination of the softness of couscous with the crisp bite of sautéed vegetables and the savory note of ham creates a well-rounded dish. To season everything and enhance the vegetable juices without adding sodium, we will use Bonsalt.

Technical Sheet

  • Estimated time: 20 minutes

  • Difficulty:

  • Servings: 2 people

Ingredients

  • 150g medium-grain couscous

  • 1 medium zucchini

  • 2 carrots

  • 80g serrano or Iberian ham, diced

  • 1 small spring onion

  • 150ml water or mild vegetable broth

  • 3 tablespoons extra virgin olive oil

  • Bonsalt

  • Ground black pepper

Professional Step-by-Step Preparation

  1. Hydrating the couscous: Place the couscous in a bowl with a pinch of Bonsalt. Bring the water or broth to a boil and pour it over the couscous. Cover the bowl and let it rest for 5 minutes. After that, add a teaspoon of oil and fluff the grains with a fork.

  2. Preparing the vegetables: Wash and cut the zucchini and carrots into very small dice (brunoise-style). Finely chop the spring onion.

  3. Sautéing: In a large skillet with olive oil, sauté the spring onion until translucent. Add the carrot and zucchini. Sauté over medium-high heat for about 5-7 minutes so they stay al dente. Season with Bonsalt and pepper.

  4. The ham touch: Add the diced ham to the skillet and sauté for a couple more minutes so it releases its aroma and becomes slightly crisp.

  5. Combining: Add the hydrated couscous to the skillet with the vegetables and ham. Mix well for one minute over low heat so the grains absorb all the flavors.

  6. Serving: Serve hot or warm. You can garnish with a little fresh parsley or chopped chives on top.
