Ingredients

  • 1 medium cauliflower

  • 1 large fennel bulb

  • 1 leek (the white part)

  • 1 small potato

  • 800ml vegetable broth or water

  • 3 tablespoons extra virgin olive oil

  • Bonsalt

  • Ground white pepper

  • A few fennel leaves for garnish

Step-by-Step Professional Preparation

  1. Flavor base: Clean the leek and fennel bulb (reserve the green leaves for the end). Chop both vegetables. In a pot with olive oil, sauté them over medium heat with a pinch of Bonsalt until they are tender and translucent.

  2. Cauliflower preparation: Separate the cauliflower into florets and peel the potato, cutting it into cubes. Add both ingredients to the pot and sauté for a couple more minutes.
