Professional Step-by-Step Preparation

  1. Cleaning and shaping: Clean the breast, removing any fat or membrane. If it is very uneven, you can truss it (tie it with kitchen twine) so it has a uniform cylindrical shape and cooks evenly.

  2. Technical marinade: In a small bowl, mix the olive oil, paprika, garlic, onion, herbs, and a generous amount of Bonsalt . Coat the entire turkey breast with this mixture, rubbing it in well so the flavors penetrate.

  3. Wrapping (the candy technique): Place the breast on a large piece of cooking-safe plastic wrap. Wrap it tightly and tie knots at both ends (as if it were a giant candy) so it stays compact and no air or water gets in.
