Fideuá is one of the most iconic dishes on the Mediterranean coast, and this version with cod and prawns delivers a deep sea flavor and a delicate texture. Unlike the classic version with meat or shellfish, cod adds a unique juiciness that blends with the noodles. Ingredients

  • 160g fideuá noodles (No. 2 or thin noodles, depending on preference)

  • 200g lightly salted or desalted cod (cut into cubes)

  • 8-10 rice prawns or langoustines

  • 1 liter fish stock (fumet)

  • 1 ripe tomato, grated

  • 1 clove garlic and half a small onion

  • A pinch of saffron or food coloring and a teaspoon of sweet paprika

  • Seasoned with: Bonsalt and extra virgin olive oil.

Professional Step-by-Step Preparation

  1. Flavoring the oil: In a paella pan or wide skillet, heat a drizzle of olive oil. Sauté the prawns for one minute on each side, remove them, and set aside. This will leave all the shellfish essence in the pan.

  2. Browning the noodles: Add the noodles to the paella pan and toast them lightly until they take on a golden color. This step is crucial so the noodles don’t overcook and stay loose. Remove and set aside.

  3. The base sofrito: In the same paella pan, sauté the finely chopped onion and garlic. When translucent, add the grated tomato and paprika. Cook over low heat until the tomato loses its water and darkens.

  4. Technical seasoning: Add the cubes of cod and sprinkle generously with Bonsalt . When using desalted cod, Bonsalt allows us to adjust the ideal level of seasoning without adding sodium to the recipe.

  5. Cooking: Add the toasted noodles and the hot fish stock (mixed with the saffron). Cook over high heat for the first 5 minutes, then reduce to medium heat.

  6. Finishing: When 2 minutes remain in the noodle cooking time, place the prawns on top. Let the fideuá rest, covered with a cloth, for 5 minutes before serving so the flavors can settle.
