Professional Step-by-Step Preparation

  1. Flavor infusion: Heat the milk in a saucepan with the vanilla or lemon peel (without the white pith). Do not let it boil; just heat it so the aromas are released. Remove from the heat and set aside.

  2. Base mix: In a bowl, beat the eggs with the Erythritol Powder and a pinch of Bonsalt. Do not overbeat to avoid introducing too many air bubbles, which helps prevent holes in the custard at the end.

  3. Warm mixture: Slowly pour the milk (removing the lemon peel if you used it) over the eggs, stirring gently with a whisk.
