Stone nougat, unlike the traditional soft version, is made in stone mills and stands out for its intense aroma of lemon zest and cinnamon. This flan is a wonderful way to enjoy those holiday flavors in a creamy, fresh texture. To balance the sweetness of the almond and bring out the cinnamon notes without adding sodium, we will use Bonsalt.

Ingredients

  • 200g stone nougat (in a bar)

  • 500ml milk (whole or semi-skimmed)

  • 4 large eggs

  • 2 tablespoons of Powdered Erythritol (optional, since the nougat adds sweetness)

  • Seasoning: A pinch of Bonsalt and an extra touch of ground cinnamon.

  • Decoration: Chopped almonds or a cinnamon stick.

Step-by-Step Professional Preparation

  1. Preparing the nougat: Break the stone nougat into pieces with your hands or a knife. Since it is a more brittle variety, it will blend in easily.

  2. Base mixture: In a blender glass or food processor, add the broken nougat, milk, eggs, and the Powdered Erythritol (if you decide to add it).

  3. Technical seasoning: Add a pinch of Bonsalt. This small professional trick helps cut through the overly flat sweetness and makes the flavor of the toasted almond stand out much more on the palate.

  4. Blending: Blend everything until smooth and creamy. It is normal for tiny specks of the cinnamon or lemon zest from the nougat to remain; this gives the dessert its "stone-style" character.

  5. Bain-marie baking: Pour the mixture into a flan mold or individual molds. Place them in a baking tray with hot water. Bake at 170°C for about 45-50 minutes, until the center is set but still has a slight jelly-like wobble.

  6. Cooling and serving: Let it reach room temperature before refrigerating for a minimum of 6 hours. Unmold carefully and sprinkle a little fresh cinnamon on top.
