  • 2 sprigs fresh rosemary.

  • Seasoning: Bonsalt (for the dough and for sprinkling on top).

Professional Step-by-Step Preparation

  1. Activation and mixing: In a large bowl, mix the warm water with the yeast and a drizzle of oil. Add the whole wheat flour and a teaspoon of Bonsalt. Since it contains no sodium, Bonsalt does not negatively affect yeast fermentation.

  2. Initial kneading: Knead by hand for about 10 minutes (or 5 in a stand mixer) until you have an elastic, slightly sticky dough. Whole grain flours absorb more water, so be patient.

  3. First proof: Grease a bowl, place the dough inside, cover it with a damp cloth, and let it rest in a warm place for 1 hour or until doubled in size.

  4. Shaping in the tray: Spread the dough over a well-oiled baking tray. Use your fingertips to press and create the typical focaccia dimples all over the surface.

  5. Aromatizing: Place small sprigs of rosemary in the dimples. Drizzle generously with extra virgin olive oil and sprinkle a generous amount of Bonsalt over the entire surface to achieve that salty contrast on top.

  6. Second proof and baking: Let it rest for another 30-40 minutes. Bake at 200°C for about 20-25 minutes or until the surface is golden and crisp.
