Step-by-step preparation

1. Preparing the vibrant batter

Blend the cooked beetroot with the egg until you get a smooth, deep purple purée. In a bowl, sift the wholemeal spelt flour and Baking powder . Add the beet purée and gently mix until you have a smooth batter; the wholemeal flour ensures a fuller texture and a higher fiber content.

2. Healthy, technical frying

Heat plenty of Extra Virgin Olive Oil in a small saucepan to ensure enough depth. The temperature should be steady (around 170-180ºC). Using two teaspoons, drop in portions of batter. You will see the fritters puff up and float. When they are golden on all sides, remove them onto absorbent paper so they stay dry and not greasy.

3. Making the cream and assembling

Mix the spreadable cheese with the finely chopped smoked salmon and a touch of pepper. You can use a piping bag to place a small amount of this cream on each fritter just before serving, or serve the cream in a central bowl so each guest can top their fritter to taste.

🔪 Chef's Secrets

  • Sodium control: With smoked salmon, the dish already has a salty touch. Use Bonsalt Castelló to adjust the fritter's flavor without adding extra sodium, protecting your cardiovascular health.
  • Perfect texture: Make sure the beetroot is well drained before blending so the batter doesn't become too runny and the fritters keep their round shape when frying.
  • Flavor variation: If you prefer a more rustic touch, you can add a pinch of fresh dill to the cheese cream, as it pairs perfectly with beetroot and salmon.

An appetizer full of life and nutrients that shows healthy eating can be an incredible visual and gastronomic experience.
