Sealing the meat: In a deep skillet or pot, heat olive oil and brown the rabbit pieces, previously seasoned with Bonsalt. They should be well browned to seal in the juices. Remove and set aside.

Farm-style sofrito: In the same oil, sauté the chopped red pepper and sliced garlic. Add the grated tomato and cook over medium heat until reduced and thickened.

Cooking the stew: Return the rabbit to the pan. Add the water (or stock), thyme, rosemary, and saffron. Season again with Bonsalt. Let it simmer gently for about 30-35 minutes until the meat is tender.

Adding the flatbreads: Break up the cenceñas flatbreads (if they are not already broken up) and add them to the stew.

Final step: Cook for another 10-12 minutes. The flatbreads should absorb much of the broth, leaving the stew rich and creamy but not dry. The potassium in Bonsalt will help the herbal flavors of rosemary and thyme stand out exceptionally well.

Resting: It is essential to let the gazpacho rest for about 5 minutes off the heat before serving so the flatbread finishes reaching its ideal texture.
