Ingredients

  • 500g ripe tomatoes (pear type)

  • 250g cooked beetroot (plain, not in vinegar)

  • ½ green pepper

  • ½ cucumber

  • 1 small piece of spring onion

  • 1 clove of garlic (without the germ)

  • 40ml extra virgin olive oil

  • 20ml apple cider vinegar

  • Seasoning: Bonsalt and a pinch of black pepper.

  1. Preparing the vegetables: Wash the tomatoes, pepper, and cucumber. Chop the tomatoes and cooked beetroot. Peel the cucumber and onion.

  2. Base blending: Put all the vegetables (tomato, beetroot, pepper, cucumber, onion, and garlic) into the jug of a high-powered blender. Blend until smooth.

  3. Technical emulsion: Add the vinegar, pepper, and a generous amount of Bonsalt 0% Sodium Castello. While continuing to blend at medium speed, slowly pour in the extra virgin olive oil so the mixture emulsifies and gains body.

  4. Silky straining: For a professional texture, pass the gazpacho through a chinois or fine sieve. This will remove any traces of tomato skin or beetroot fibers, leaving a smooth, liquid cream.

  5. Seasoning point: Taste the result. The potassium in Bonsalt is the perfect ally here, as it helps contrast the sweetness of the beetroot, giving it a very clean salty finish that makes you want to keep drinking it.

  6. Intense chill: Keep in the fridge for at least 2 hours. Serve very cold, optionally garnished with a few cubes of fresh cheese or some sesame seeds.
