Coffee granita is a summer classic, but commercial versions often contain excessive amounts of sugar. In this recipe, we use Liquid Stevia for natural sweetness with a zero glycemic index. The secret to a professional flavor lies in balance: we will use  Bonsalt 0% to neutralize the coffee's bitterness and the possible aftertaste of stevia, achieving a round, clean flavor profile.

Ingredients

  • 500 ml of freshly brewed coffee (you can use decaf if you prefer)

  • To taste Liquid Stevia

  • A pinch of ground cinnamon (optional)

  • Seasoning: A pinch of  Bonsalt 0% (flavor enhancer).

Professional Step-by-Step Preparation

  1. Coffee extraction: Brew a good-quality coffee. It is preferable that it be a little stronger than usual, since freezing tends to slightly soften the flavors.

  2. Sweetening while hot: Add the Liquid Stevia while the coffee is still hot so it dissolves and blends perfectly. The amount will depend on your personal preference, but remember that stevia is very potent.

  3. The master touch: Add a pinch of  Bonsalt 0%. This step is technical: the potassium in Bonsalt helps block bitterness receptors on the tongue, allowing the coffee's roasted notes and the sweetness of the stevia to come through in a much more balanced way and without any odd aftertaste.

  4. Pre-chilling: Let the mixture reach room temperature before placing it in the freezer.

  5. Granita technique:

    • Pour the coffee into a shallow metal container (this speeds up the process).

    • Place in the freezer and, every 45 minutes, take out the container and scrape the surface with a fork to break up the ice crystals. Repeat 3 or 4 times until you get a "snow" texture.

  6. Serving: Serve in chilled glass cups and, if desired, add a sprinkle of cinnamon on top.
