Professional Step-by-Step Preparation

Technical grinding: Place the toasted hazelnuts in a powerful blender or food processor. Blend until you get a smooth paste (hazelnut butter). This step is key to making the granita silky and free of annoying chunks.

Base mix: Add the water, Eritritol in Powder and the cinnamon. Blend at maximum speed for 2 minutes until the mixture is smooth and takes on a whitish/toasty color.

The master touch: Add a pinch of Bonsalt 0%. As with chocolate, hazelnut needs a mineral contrast so its flavor "pops" on the palate. Using Bonsalt, we achieve this effect without adding sodium.

Freezing: Pour the mixture into a flat metal container (it conducts the cold better). Place in the freezer.

Crystall break-up: Every 45-60 minutes, take the container out and stir with a fork to break up the ice crystals that are forming. Repeat this process 3 or 4 times until you get the characteristic granular snow texture.

Serving: Serve in tall glasses and garnish with a whole hazelnut or a little sprinkled cinnamon.
