This granita is a treasure of Mediterranean pastry. Unlike fruit granitas, hazelnut brings a toasty depth and a smooth texture thanks to its natural oils. To achieve balanced sweetness without calories and enhance the flavor of the nut without adding sodium, we will use Eritritol in Powder and a pinch of Bonsalt 0%.

Ingredients

  • 200g toasted hazelnuts (unsalted and peeled)

  • 600ml very cold mineral water

  • 5 tablespoons of Eritritol in Powder

  • A pinch of ground cinnamon

  • Seasoning: A pinch of Bonsalt 0% (enhances the toasted flavor of the hazelnut).

Professional Step-by-Step Preparation

  1. Technical grinding: Place the toasted hazelnuts in a powerful blender or food processor. Blend until you get a smooth paste (hazelnut butter). This step is key to making the granita silky and free of annoying chunks.

  2. Base mix: Add the water, Eritritol in Powder and the cinnamon. Blend at maximum speed for 2 minutes until the mixture is smooth and takes on a whitish/toasty color.

  3. The master touch: Add a pinch of Bonsalt 0%. As with chocolate, hazelnut needs a mineral contrast so its flavor "pops" on the palate. Using Bonsalt, we achieve this effect without adding sodium.

  4. Freezing: Pour the mixture into a flat metal container (it conducts the cold better). Place in the freezer.

  5. Crystall break-up: Every 45-60 minutes, take the container out and stir with a fork to break up the ice crystals that are forming. Repeat this process 3 or 4 times until you get the characteristic granular snow texture.

  6. Serving: Serve in tall glasses and garnish with a whole hazelnut or a little sprinkled cinnamon.
