Homemade Tiger Nut Horchata with Stevia

Horchata is much more than a soft drink; it is a source of health thanks to the digestive and prebiotic properties of tiger nuts. When made at home, we avoid industrial pasteurization processes that degrade its flavor. Ingredients

  • 250g dried tiger nuts (preferably with D.O. Valencia)

  • 1 liter of very cold mineral water

  • Stevia + Eritrytol 1:1 de Castelló to taste

  • A piece of lemon peel (only the yellow part)

  • A pinch of cinnamon stick or ground cinnamon

Professional Step-by-Step Preparation

  1. Deep hydration: Wash the tiger nuts under the tap. Soak them in plenty of cold water for 24 hours. It is vital to change the water at least 2 or 3 times and keep them in the fridge to prevent fermentation.

  2. Technical grinding: Drain the tiger nuts and put them in the blender jug with the very cold mineral water (you can add a few ice cubes if you prefer). Blend at maximum speed until you get a fine, whitish paste.

  3. Flavoring: Add the lemon peel and cinnamon. Let it infuse in the fridge for 30 minutes so the water absorbs the citrus and balsamic aromas.

  4. Precision filtering: Strain the mixture through a fine cloth sieve or a nut milk bag. Press firmly to extract all the "essence" from the tiger nut (the dry residue should be almost like sawdust).

  5. Glacé service: Horchata should be served very cold, almost at slushy point. Always shake before serving, as it is a natural drink and the sediment tends to sink to the bottom.
