Step-by-Step Professional Preparation

1. Make the aromatic oil:

In a blender, add the fresh basil leaves (saving a couple for garnish), the ground ginger, the extra virgin olive oil, and the Modena vinegar. Season with a pinch of Bonsalt 0% Sodium Castello and pepper. Blend until you get a smooth green aromatic emulsion. Set aside.

2. Prepare the sheets:

Cook the lasagna sheets in plenty of water with a pinch of Bonsalt 0% Sodium Castello for the time indicated by the manufacturer. Once ready, transfer them to a bowl of cold water to stop the cooking, then carefully dry them on a clean kitchen towel.

3. Layering:

Place the first lasagna sheet on the base of the plate. Arrange the opened piquillo peppers on top and drizzle with a little of the basil and ginger oil we prepared. Add a second sheet and cover with slices of fresh cheese, adding another teaspoon of our dressing.

4. Final touch and seeds:

Close the lasagna with a final sheet of pasta. On top, crown it with a bouquet of lamb’s lettuce and arugula. Sprinkle over the seed mix (poppy, sesame, pumpkin, and sunflower) to add a crunchy contrast. Finish by drizzling the rest of the aromatic oil over the whole dish.

This cold lasagna is a different and elegant way to present a pasta dish, ideal for sharing at a meal with friends or family who appreciate healthy, creative cooking.
