Step-by-Step Professional Preparation

  1. Fruit preparation: Wash the strawberries well, remove the stem, and chop them up. Set aside a couple of very finely chopped strawberries if you want to find pieces of fruit in the popsicle.

  2. Blending: Put the strawberries in the blender jug along with the Castelló Stevia 1:1 and the drops of lemon juice. Blend until you get a smooth purée.

  3. Mixing: Add the Greek yogurt and milk to the strawberry purée. Blend again at low speed so the mixture is smooth and creamy.

  4. Assembly: If you set aside strawberry pieces, spread them over the bottom of the popsicle molds. Pour in the yogurt and strawberry mixture until the molds are full.

  5. Freezing: Insert the sticks and place in the freezer for at least 5 or 6 hours, although it is best to leave them overnight so the texture sets firmly.

  6. Unmolding: To remove the popsicles without breaking them, run the mold under warm water for a few seconds before carefully pulling on the stick.
