Professional Step-by-Step Preparation

Preparation of the artichokes: Clean the artichokes by removing the tougher outer leaves and the tips. Cut them into quarters and set them aside in lemon water so they do not oxidize.

Sealing the meat: In a casserole dish with the olive oil, brown the rabbit pieces, previously seasoned with Bonsalt and black pepper. Once browned, remove and set aside.

Sautéing: In the same oil, add the onion and garlic, finely chopped. Cook over medium heat until the onion is translucent.

Cooking the vegetables and pine nuts: Add the drained artichokes and the pine nuts to the casserole dish. Sauté everything together for a couple of minutes so the pine nuts release their aroma.

Stewing: Return the rabbit to the casserole dish. Turn up the heat and pour in the white wine, letting the alcohol evaporate. Add the vegetable stock and thyme.

Finishing: Cover the casserole dish and let it cook over low heat for about 30-35 minutes, or until the meat is tender and the sauce has reduced. Taste and adjust the Bonsalt if necessary before serving.
