  1. Starter dough: Mix the preferment ingredients until a ball forms. Let it rest in warm water until it floats or in a covered bowl until it doubles in size.

  2. Main kneading: In a large bowl, mix the spelt flour, the Cream of Tartar , the Stevia + Eritrytol 1:1 de Castelló , the Bonsalt and the yeast. Add the eggs, the remaining milk, the orange blossom water and the citrus zest.

  3. Adding the preferment: Add the starter dough to the main mixture and combine well. Finally, add the softened butter and knead for 10-15 minutes until you get a smooth, elastic dough.

  5. Shaping: Gently deflate the dough with your fists. Form a ball and make a hole in the center, stretching outward to give it the shape of a rosca. Place it on a baking tray lined with parchment paper.

  6. Second rise: Let it rest again for about 60-90 minutes until it grows significantly again.

  7. Decoration and baking: Brush carefully with beaten egg. Decorate with almonds and orange. Bake at 180°C for 18-22 minutes or until golden brown.

  8. Cooling: Let cool on a wire rack before serving or filling.
