Autumn Salad in a Jar

Ensalada de otoño en bote

The jar salad (jar salad) is the ultimate solution for eating healthy on the go. By placing the dressing at the bottom and the leafy greens at the top, we prevent the ingredients from oxidizing or wilting. This autumn version combines the warmth of roasted pumpkin with the sweetness of pomegranate and the texture of quinoa. To season and bring out the earthy flavors without adding sodium, we will use Bonsalt 0%.

Technical Sheet

  • Estimated time: 30 minutes (including roasting the pumpkin)

  • Difficulty:

  • Servings: 1 person (500-700ml jar)

Ingredients

  • 100g diced pumpkin

  • 50g cooked quinoa

  • 1 handful baby spinach

  • 2 tablespoons pomegranate seeds

  • 4-5 chopped walnuts

  • 30g feta cheese (optional)

  • For the dressing: 2 tablespoons extra virgin olive oil, 1 teaspoon mustard, 1 teaspoon honey.

  • Seasoning: Bonsalt 0% and black pepper.

Professional Step-by-Step Preparation (Layering Method)

  1. Preparing the pumpkin: Roast the diced pumpkin with a drizzle of oil and a pinch of Bonsalt at 200°C for 20 minutes, until tender. Let it cool completely before assembling the jar.

  2. Layer 1 (The Dressing): Pour the oil, mustard, honey, pepper, and a generous amount of Bonsalt 0% into the bottom of the jar. Shake the jar lightly (without the other ingredients) to mix.

  3. Layer 2 (Hard Ingredients): Add the cooled roasted pumpkin. In contact with the dressing, it will marinate and enhance its flavor.

  4. Layer 3 (Protein and Grains): Add the cooked, drained quinoa. This layer will act as a protective barrier so the dressing does not rise up to the leaves.

  5. Layer 4 (Fruit and Crunch): Add the pomegranate seeds, crumbled feta cheese, and chopped walnuts.

  6. Layer 5 (Green): Finish by filling the remaining space with the baby spinach, packed in well. Seal the jar tightly.

Chef's Tip: When it's time to eat, simply turn the jar out onto a plate or shake it vigorously so the dressing at the bottom coats all the ingredients.
