Ingredients

  • 400g cooked pinto beans (can be from a can, well rinsed and drained)

  • 200g white fish (desalted cod, hake or monkfish)

  • 1 Italian green pepper

  • 1 small red pepper

  • 1 spring onion

  • A handful of black olives (optional)

  • 3 tablespoons extra virgin olive oil

  • 1 tablespoon cider vinegar

  • Bonsalt 0%

  • White pepper and a little fresh parsley

Professional Step-by-Step Preparation

  1. Fish preparation: Cook the fish steamed or on a griddle with a drop of oil until done. Once warm, flake it or cut it into cubes, removing any bones.

  2. Legume preparation: If you use canned beans, rinse them under cold running water until they stop foaming and drain them thoroughly. Place them in a large bowl.

  3. Vegetable cutting: Chop the peppers and spring onion into very small dice (brunoise style) so they blend well with the size of the beans.

  4. Mixing: Add the chopped vegetables and flaked fish to the bowl with the pinto beans. Add the olives if you decide to use them.

  5. Vinaigrette: In a separate container, emulsify the olive oil, vinegar, white pepper and a generous amount of Bonsalt 0%.
