This salad is an elegant and sophisticated dish that combines the richness of salmon with the bright, tangy burst of capers. Ingredients

  • 150g of quality smoked salmon (or fresh salmon, pan-seared and diced)

  • 2 tablespoons of capers (well drained)

  • 150g of tender sprouts or lamb's lettuce

  • ½ spring onion or a little fresh dill

  • 1 ripe avocado

  • For the dressing: 3 tablespoons of extra virgin olive oil, the juice of half a lemon, and a teaspoon of mild mustard.

  • Seasoning:  Bonsalt 0% and ground black pepper.

Step-by-Step Professional Preparation

  1. Vegetable base: Arrange the tender sprouts on a large serving platter. If using spring onion, cut it into very thin julienne strips and scatter it over the leaves.

  2. Preparing the salmon: Cut the smoked salmon into wide strips or, if you prefer fresh salmon, sear it on a griddle with a pinch of  Bonsalt 0%, let it cool, and flake it into pieces.

  3. The creamy touch: Peel the avocado, remove the pit, and cut it into thin slices. Arrange them attractively alongside the salmon over the bed of sprouts.

  4. Adding the capers: Scatter the capers over the salad. Their tangy touch is the perfect counterpoint to the healthy fat of the salmon and avocado.
