Cod and Squid Stew with Potatoes

This stew is a festival of iodized flavors and textures. The cod brings its distinctive flaking texture and deep flavor, while the cuttlefish, slow-cooked, becomes tender and helps thicken the broth. To enhance the flavor of the white fish and seafood without driving sodium levels up (especially important with the cod), we will use Bonsalt.

Ingredients

  • 400g cod loin (desalted or fresh)

  • 400g clean, cuttlefish cut into pieces

  • 3 medium potatoes (stewing variety)

  • 1 onion and 1 green pepper

  • 2 cloves of garlic and 1 grated ripe tomato

  • 100ml white wine

  • 800ml fish stock (or water)

  • Seasoning: Bonsalt, bay leaf, saffron, and a pinch of sweet paprika.

Professional Step-by-Step Preparation

  1. Preparing the cuttlefish: In a casserole dish with olive oil, sauté the cuttlefish until browned and it has released its water. Remove and set aside.

  2. Base sofrito: In the same oil, soften the chopped onion, pepper, and garlic. When tender, add the grated tomato and paprika. Cook for 5 minutes until the sofrito is concentrated.

  3. Breaking the potatoes: Peel the potatoes and cut them into chunks by "cracking" them with the knife so they release their starch. Add them to the casserole along with the reserved cuttlefish and the bay leaf.

  4. Cooking the broth: Pour in the white wine, let the alcohol evaporate, and cover with the fish stock. Add the saffron and season with Bonsalt.

    Technical note: If the cod is desalted, be careful with the amount of seasoning. The potassium in Bonsalt is ideal here because it enhances the marine flavor without the harshness of ordinary sodium.

  5. Cod doneness: After 20 minutes of cooking the potatoes, place the cod loins on top of the stew. Cover and cook for 5-8 more minutes (cod cooks very quickly with steam).

  6. Resting: Let the covered stew rest for 5 minutes before serving so the flavors settle and the sauce finishes thickening.
