Step-by-Step Instructions (Procedure)

  1. Preparation and Cleaning

    Wash the sweet potatoes very well under running water to remove any traces of dirt from the skin. Dry them carefully. It is vital to choose pieces of similar size so that the cooking time is the same for all of them.

  2. The Wrapped Secret

    Wrap each sweet potato individually in aluminum foil. This allows them to cook in their own steam, keeping all the moisture in and concentrating the natural sugars.

  3. Slow Roasting

    Preheat the oven and add the sweet potatoes. Bake for about an hour at a moderate temperature of between 140ºC and 150ºC. Low, slow cooking is the key to transforming starch into maltose, achieving a plump texture and an intensely sweet flavor.

  4. Cooking Check

    Once the time is up, pierce one of the sweet potatoes with a skewer. If it slides in all the way to the center with complete ease, they’re ready! Remove from the oven and let cool on a wire rack.
